From the Coonawarra wine region, Hollick 2017 Cabernet Sauvignon is produced from old vines Cab Sauv. This wine is so fragrant and telling of the wine region from which it is raised. On the nose, there are dark cherry, tobacco, minty, mocha, wild herbs and dark spices, full-bodied and lush on the palate with great acidity for food. Excellent now, but will continue to evolve over the next five to eight years. Pour with steaks, burgers, ribs or simply on its own.

There's something about Coonawarra Cabs. Those hints of tobacco, menthol, and eucalyptus on the nose. A mouthful of wild berry fruit, backed by herbs and a touch more of that menthol. I had this with a gourmet beef dip sandwich (secret ingredient homemade blackberry bacon jam) and it was a brilliant pairing.
