Dark brooding fleshy fruit such as cassis and blackberries. Great structure with a pleasantly bitter finish that refreshes. Decant for 1-2 hours first. Full-bodied.

Cabernet Merlot food pairings: braised lamb shanks with rosemary and roasted garlic accents, good quality chocolate.

Tasted in 2024, this wine is showing some age in the colour with a rusty red coloured rim. On the nose, there are still some red berry notes, but they are muted, and more hints of earth, tea, and a slight hint of oak. Medium bodied on the palate, with some dark berry notes, but maybe a bit lighter than in the past. This is still quite tasty, but I would enjoy it sooner than later! This wine is 17 years old now so it's had a lovely run.
Made from our own estate Cabernet Sauvignon, and several other selected Niagara vineyards.
? Harvest Date: October 18th – October 30th, 2007
? Yields of less then 2 Tonnes per acre were severely restricted. Approximately 1 bottle per vine. We netted the rows to prevent bird damage. (Less than 35 hL/ha)
? Fermented on the skins with manual cap punching lasting over a month followed by 20 months of aging in French Oak with 60% new and 40% 1 year old barrels.
