A fresh yet complex white that opens with aromas of ripe pear, golden apple, and lemon curd, layered with subtle hints of toasted almond and wet stone. It’s medium-bodied, dry, and textured on the palate, with bright acidity, creamy mid-palate weight, and 13.5% alcohol providing balance and finesse. Serve it lightly chilled to showcase both its freshness and depth. Fascinating fact: Winemaker David Sheppard created the Project N°15 series as an experimental collection exploring small-lot, terroir-driven wines—this “OC” Chardonnay hails from specific limestone-rich blocks on the estate that yield exceptional minerality and focus. It will age beautifully for 4–6 years, gaining roundness and complexity over time.

Food pairings: seared scallops and lemon butter sauce, where the wine’s citrus and minerality enhance the richness of the dish. Or enjoy it with roast chicken and thyme, where its creamy texture and bright acidity create perfect balance.

This Chardonnay is a thrown back to a more warm, oaky, luscious style. This wine plays homage with rich aromas of golden apple, honey, and buttered biscuits. Yet where this wine elevates the style is with wonderful body and acidity, as the wine is medium+ bodied, but the acidity is bright and vibrant, balancing rich citrus and apple flavours on the palate. Enjoy with a classic herb-roasted chicken on a Sunday dinner.
