This predominantly Cabernet Sauvignon (Cabernet Franc, Petit Verdot in tiny amounts) will be wine of the month at the LCBO in May 2015. The grapes selected for this wine are chosen from the best sites - MAX 1, 3, and 5. They are digitally sorted based on size and colour then fermented and aged 12 months in French oak; 10% new oak. This is a full-bodied red wine with aromas and flavours of dark fruit, cherry, toast, leather, mint, pencil shaving. Polishing tannins and bold acidity. The winemaker suggests this wine could easily age another 6-8 years. Perfect with my medium-rare steak.

Look for this one in May 2015 when it will be Wine-of-the Month at the LCBO. You'll be glad you tried it; aromatics show cassis, strawberry and vanilla. Palate adds leather, mint, cacoa and slight spice to ripe berry flavours. Smooth mouthfeel and very long multi-layered finish. Serve with red meats, venison or suckling lamb.

An interesting complex Cabernet Sauvignon, with a variety of aromas and flavours- leather, mint, spice, raspberry, leather, coco...just to name a few. This is a mixture of 85% Cab Sauv, 10% Petit Verdot and 5% Cabernet Franc, which adds to the complexity and aromatics. Medium acidity and nice round tannins. Well done and well worth the sub $20 price tag.
