Domaines Ott Château de Selle Côtes de Provence Cru Classé Rosé from the 1500ml magnum format is a dry, medium-bodied rosé of exceptional refinement and precision, blending organically farmed Grenache, Cinsault, Syrah and Mourvèdre from one of Provence's most storied classified estates, with a luminous, barely-there blush hue and a restrained, sophisticated nose of fresh jasmine, yellow plum, candied violet and a whisper of crushed wet stone that opens gradually to reveal a silky, beautifully textured palate with a long, saline, mineral-driven finish. This magnum format of 1.5 litres is ideal when you would like to begin a patio gathering with a generous, elegantly chilled pour that stays cool longer in the bottle and makes a stunning centrepiece at a summer table. Fourth-generation winemaker Jean-François Ott tends his certified organic vineyards at Château de Selle with the same philosophy of minimal intervention and deep respect for terroir that founder Marcel Ott brought from Alsace when he established this estate in 1912 after replanting phylloxera-ravaged vineyards near Draguignan with noble Provençal varieties. Château de Selle holds Cru Classé status, one of only a select number of Côtes de Provence estates to earn this prestigious classification, and the domaine has been part of the Louis Roederer Collection since 2004. Serve it well chilled alongside cold roast chicken with a tarragon and lemon aioli, where the wine's mineral depth and delicate fruit frame the dish with quiet grace; it is equally lovely with a salad of goat cheese, fresh raspberries and toasted pistachios, the wine's saline finish and floral lift dancing through every bite. Enjoy through 2029.

Rosé food pairings: cold roast chicken, salads with goat cheese and fresh red berries, smoked trout.
