Dandelion Vineyards Lionheart of the Barossa Shiraz from the Barossa Valley, South Australia is a dry, full-bodied unfiltered red with a richly expressive nose of crushed boysenberry, dark plum, macerated blackberry, dried violet, warm spice, and a savoury thread of licorice and dark chocolate from its time in French oak barriques. On the palate it is plush and generously structured, with fine sandy tannins, bright acidity, and a long, layered finish of dark berry fruit, pepper, and cocoa that lingers with wonderful persistence. Serve it at room temperature and enjoy from 2026 through 2040, decanting beforehand to let it fully open. This is the convenient half bottle size (375 ml) which is ideal when you'd like to begin a meal with a glass and half each to toast. Bulgarian-born winemaker Elena Brooks, who began interpreting barrel tastings in her mother's winery at age 12 and crafted her first wine at 16, founded Dandelion Vineyards in 2007 alongside her husband Zar, and the venture was voted New World Producer of the Year at the 2020 Sommelier Wine Awards, the first Australian producer ever to earn that distinction. This wine is named in honour of Carl Lindner, the Barossa's lifelong champion of old vines, and is crafted from organically farmed Kinkora Vineyard fruit, with some vines over a century old still thriving on their own original rootstock in some of the oldest soils on the planet. Pair it with espresso and cocoa-rubbed flank steak fresh off the grill, where the wine's dark fruit intensity and spice will mirror every smoky, savoury bite, or pour it alongside barbecued bison steak, letting the wine's bold concentration and earthy depth rise to meet the richness of the meat.

Shiraz food pairings: grilled meats and vegetables, pizza, barbecued beef, bison steak, grilled or spice-rubbed chicken.
