From Château Lamothe de Haux, Chombart & Speck Cave Mystère 2018 Merlot is a joint wine creation of Henry of Pelham and Chateau Lamothe de Haux in Bordeaux with grapes sourced from the Cadillac region, Entre-deux Mers. An easy quaffer, ready to drink now, old meets new with fresh cherry, red berry, plum, mocha and juicy acidity for foot. Tannins are easy-going. The wine was matured in French oak barrels for 18 months.

Merlot food pairings: veal Porterhouse, veal schnitzels, cocoa-rubbed beef flank steak, roast pork, veal cutlets, Salisbury steak.

Aromas of plum and cherry with a hints of mocha, cedar and smoke. Full bodied, smooth on the palate with soft tannins and medium acidity. Fruit and berry notes are ripe on the palate with more smoke and cedar. Enjoy with a roast beef dinner.
From the Bordeaux wine region, Chombart & Speck Cave Mystère 2018 Merlot is a collaboration between Ontario's Speck brothers (Henry of Pelham) and Bordeaux's Damien Chombart of Château Lamothe de Haux. The château's cellars date back to the 1700s, when the miles of limestone caves beneath the vineyards were excavated to provide building materials for the construction of the city of Bordeaux. This is a stylish Merlot with bright and juicy plum, blueberry, fine herb and toasty oak spice flavours on the palate. Elegant and vibrant. Pair with a roast rack of lamb. - Community Wine Reviews
