A soft, light-bodied Italian white wine with moderate acidity (I expected a lot more). Aromas of white melon and dried herbs. Good minerality. The vines are planted in volcanic soils. Pair with seafood.

Soave Classico food pairings: seafood and pasta dishes, green salads topped with grilled chicken, pan-fried panfish.

Reviews and Ratings

Jane Staples - Certified Sommelier rated this wine as 90/100 with the following review:

Fresh aromas of acacia, florals and honey dew melon. Mineral aspect on palate due to volcanic soils where grapes grow. Great aperitif or with delicate white fish.
Tasted Jan. 2018
This Soave Classico from the Veneto wine region has a creamy, mouthful of ripe stonefruit, fresh herbs and mineral flavours on the palate. Cantina Del Castello 2015 is so easy to enjoy. Pair with grilled fish dishes. - Community Wine Reviews

Unquenchable by Natalie MacLean

Natalie MacLean is a new force in the wine writing world ‐ a fiesty North American answer to Hugh Johnson and Jancis Robinson. She can write beautifully about wine.

The Financial Times of London

There are very few people in the wine world who "get it" and Natalie is one of those who brings more fun to a buttoned-up and stodgy game.
