Bolla Amarone della Valpolicella Classico from Veneto opens with intoxicating aromas of black cherry preserves, dried fig, dark chocolate, and sweet spice with hints of tobacco and toasted cedar. Dry and full-bodied with velvety tannins, it flows across the palate with opulent dried fruit character and closes with a long, persistent finish of cocoa and warm spices. Serve it slightly below room temperature or cellar it into the early 2030s. Christian Scrinzi, Director of Oenology at Gruppo Italiano Vini since 2001, crafts this wine using the traditional appassimento technique where grapes are dried for several months before fermentation to concentrate sugars and flavors, continuing a winemaking legacy that began in 1953 when the Bolla family became the first to commercially bottle Amarone, presenting the inaugural vintage to founder Alberto Bolla for his 80th birthday and revolutionizing the category. Pair this sumptuous red with slow-braised short ribs where the wine's rich fruit complements the tender, wine-braised meat, or enjoy it with aged Parmigiano-Reggiano and dark chocolate as the wine's intensity stands up beautifully to bold flavors.
