Really Impressive! If there is such a thing as a 'golden buzzer' for Pet Nat, Black Market Wine Company's Nothing to Declare (NTD) sparkling rosé would definitely merit it. In fact, this vintage was awarded Double Gold in the 2023 All Canadian Wine Championships.

Produced in the ancestral method with spontaneous wild fermentation with indigenous yeast, these grapes were allowed to do what they wanted to resulting in a wine with a true Pet Nat character. In addition, the wine was bottled unfined and unfiltered before it finished primary alcoholic fermentation. The fermentation occurred inside the sealed bottles which produced the carbon dioxide to create the sparkling wine which were aged on lees for four months and riddled to disgorgement on March 8th 2023. Less than 20 ppm sulphur was added at disgorgement. Only 785 bottles produced (with a limit of three bottles per customer).

This Pet Nat is zeeesssty, lively, with a brilliant and creamy mousse of ripe crab apple, strawberries, wild berries and rhubarb flavours with a kiss of spice, creamy and fresh on the palate. Pet Nat is not a wine you hold on to. Best to enjoy it chilled on the patio with good food and great friends! Tasted July 2023.
