Bauser Brut Rosé Champagne is a terroir-driven grower Champagne from the family-run Maison Bauser, a récoltant-manipulant established in Les Riceys in the early 1970s by René Bauser, a dedicated winegrower who planted his first vines and eventually launched his own label, passing the baton in 2000 to his three children, Sophie, Frédéric and Sébastien, who continue to manage every step of production from vine to bottle using sustainable practices across their estate vineyards. Les Riceys is a fascinatingly rare corner of Champagne, sitting closer to Chablis than to Épernay on the same Kimmeridgian chalky marl soils as great Burgundy, and uniquely holding three distinct appellations within a single commune: Champagne, Rosé des Riceys and Coteaux Champenois, a distinction that gives the Bauser family an extraordinary range from which to express their terroir. This sparkling wine is made using Méthode Traditionnelle, or the traditional method of the second fermentation in the bottle, just as they do in the Champagne region. The nose is precise and inviting, with crushed wild cherry, pomegranate and a whisper of dried hibiscus, while the palate delivers a creamy mousse, lively acidity and a delicate spiced finish that lingers with elegance. Serve it well chilled and enjoy through 2028. It is a lovely companion to smoked salmon blinis with crème fraîche, where the wine's red fruit and bright acidity cut right through the richness, or pour it alongside a charcuterie platter with cornichons for a festive, effortless aperitif.
