From the renowned Twenty Mile Bench in the Niagara Escarpment, the 2022 Bachelder Wismer-Foxcroft Gamay Noir is crafted exclusively from a single vineyard and features a vinification process where 33% of the grapes are used as whole clusters. Displaying a deep, sumptuous crimson hue in the glass, this bone-dry, medium-bodied red reveals an enticing medley of orchard cherry, untamed woodland berries, tangy currants, succulent plum, and a hint of mature blackcurrant, all accentuated by a subtle mineral essence. On the palate, it unfolds with persistent vibrancy, delivering juicy, savoury layers that are elegantly anchored by a firm tannic backbone reminiscent of finely woven cashmere. Enjoy its immediate allure or allow it to evolve in the cellar until 2030 for even greater complexity. This wine would be a great companion to baked veal-stuffed Portobello mushrooms, or three-pepper rubbed steak from the grill.

Gamay Noir food pairings: baked veal stuffed Portobello mushrooms, three-pepper rubbed steak from the grill, leek and mushroom risotto.
