Recioto predates Amarone by centuries, but, until the final processes, is made in the identical manner and with the same grapes (mostly Corvina and Rondinella). The grapes are mat-dried following harvest, and regulations stipulate that Amarones cannot be pressed before December 1st after harvest; Reciotos not until January 1st. That extra month creates even sweeter grapes. Producers tend not to oak age the wines as it leads to an unwanted oxidative character. This richly plummy and almost chocolaty version is great on its own. Source: Vintages Wine Panel, undated.
