Traditional Greek Pork Souvlaki

Serves: 6
Preparation Time: 2 hrs +
Difficulty: Easy

Ingredients:

1/2 lemon, juiced
2 Tbsp olive oil
1/2 tsp dried oregano
3 cloves garlic, crushed
2 lb pork tenderloin, 1 inch cubes
2 medium onions, cut 1"
2 green bell peppers, cut 1"
12 grill skewers Tzatziki Sauce:
1/2 cup plain yogurt
1 Tbsp olive oil
1 Tbsp lemon juice
1/2 tsp salt
1/2 tsp ground black pepper
1 Tbsp chopped fresh dill
3 cloves pressed garlic
1/2 English cucumber, seeded, grated

Cooking Instructions:

In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.

Preheat grill for medium-high heat. Thread pork, peppers, and onions onto skewers.

Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.

Serve with rice or couscous and Tzatziki sauce.

Sauce: In a glass bowl, combine all ingredients except for the cucumber.

Squeeze the juice from the grated cucumber. Stir into the sauce. Let stand for 30 minutes to 1 hour to blend flavours.
