Cluver Can-Can Chicken

Cluver Can-Can Chicken

Yield: 4 servings

One large free-range chicken, giblets removed
Marinade
¼ cup butter melted
1/2cup red wine vinegar
¼ cup olive oil
Handful of Italian flat-leaf parsley,finely chopped
3-5 cloves garlic, finely chopped
1 red onion, finely chopped
Freshly ground salt & black pepper
1 can any unsweetened sparkling apple juice or good cider can be substituted

Melt the butter,then add all the other ingredients except for the apple cider.

Marinate the chicken in a large bowl – leave it for at least an hour, overnight would be best. You need to place the charcoal on the sides and make sure you have a drip tray in the middle. You need indirect heat. Open the can of appletizer, put the chicken over it and place it in the middle of the bbq. It takes about an hour to cook.
