Polaris is always so pretty, but Township 7's Seven Stars Polaris 2021 is drop-dead gorgeous! Refined and elegant, fresh, soft but structured, it is a study in perfect balance, body, flavour and acidity in a traditional method sparkling wine. As radiant as its namesake star, this Blanc de Blanc is crafted from a base wine of 100% Chardonnay (unoaked).

Grapes are hand-harvested from two South Okanagan vineyards, Hidden Terrace in north Oliver and the winery's estate vineyard on the Naramata Bench. "Aged en tirage for 21 months to develop delicate autolytic notes, the wine was then riddled, disgorged, and finished with our proprietary dosage, adding layered complexity and finesse." After disgorgement, the wine is bottle-aged for an additional 18 months.

Dry, medium-bodied with a gentle perlage revealing citrus blossom, soft mandarin, brioche, fresh peach and apricot on the palate, it finishes long and bright on a creamy, lightly toasted brioche note. Superb chilled and sipped on its own and we enjoyed it chilled with fresh Royal Miyagi oysters topped with just a squeeze of fresh lemon juice. Tasted March 2026.

This vintage was awarded Gold at the 2023 BC Lieutenant Governors Wine Awards.
