Produced in the Methode Traditionelle as in the making of champagne, the inaugural vintage of Township 7 Vineyards and Winery’s Seven Stars Equinox 2015 is produced from 100% Pinot Noir (Dijon, Burgundy clone 828) sourced from a single-vineyard from Sperling Vineyards. The sparkling rosé is so named for the Equinox, where day and night are of equal length and is as balanced, poised and elegant as a prima ballerina en pointe. In the glass it is a pearly, light cherry-pink -- the colour of BC skies dipping into night or perhaps the first flush of a morning sunrise. The nose is pronounced with fresh dairy cream, intense dried strawberries and a citrus spritz. On the palate, it is bone-dry with fine, light chalky tannins and a pearly, lively persistent mousse of raspberry creamsicle, fresh red berry, citrus zest and brioche flavours. A classic, quality blanc de noir bubble, rich, luxurious, creamy and zesty. What more can you ask for except for more?

The Pinot Noir wine grapes for this bubble are farmed organically and biodynamically. The wine is left en tirage for a minimum of 25 months to enhance and create the classic autolytic flavours found in champagne and is dressed with a dosage from Township 7’s Pinot Noir and Reserve Chardonnay wines. The Seven Stars line is Township 7’s line of sparkling wines made in the traditional-method. Equinox is a Wine Club Exclusive. Tasted March 20 2019.
