Gerard Bertrand seems to have a collection of interesting Southern French wines. From reds, like Les Aspres, to his Mauzac based Limoux named in honour of Francophile Thomas Jefferson.
 The extraction method favoured by Provençal winemakers gives it the distinctive pale, rustic pink colouration.
Aromas of dried thyme and sage.  These rose styles are more subtle than their counterparts in Tavel, or other places where they are extremely deep and bubblegum coloured.
Only a little fruit to it.  Some apple skin, ranier cherry, and nectarine to the palate, with some solid minerality.
Pair it with scampi or crab cakes.
