This unfiltered Cabernet Sauvignon has goodness going on. It feels extra dry and medium bodied with velvety tannins. Its flavour profile is lovely with warm delicious dark fruit – cherries and blackberries are the headliners – teamed up with earthy, leathery and spice characters. I'd serve this Pondview Estates red from Ontario's Four Mile Creek appellation with grilled sirloin any day.

Ripe red berries, dried herbs and fresh floral notes headline this refreshing rosé. Grenache and Cinsault are the varietals in this extra dry, medium bodied, warm weather friendly rosé from the Côtes de Provence appellation in southern France. I opened this 2014 unfiltered cabernet sauvignon in 2021 and it has plenty of palate appeal. It feels extra dry with silky tannins and medium bodied. The flavours taste like warm dark fruit – the headliners are cherries and blackberries – mingled with distinctive earthy, leathery and spice tones. This flavour profile is simply stunning. I’d serve this Pondview Estates red from Ontario’s Four Mile Bench appellation alongside slow cooked ribs and baked pastas such as lasagna. Reviewed June 19, 2021

I opened the 2017 vintage of this three varietal blend in 202 and it checks a lot of boxes for me. The mouthfeel is lingering, mid-weight and effortlessly delivers this rosé’s substantial strawberry and red apple flavours. These delicious flavours continue through the finish. The blend bill is Cabernet Franc, Gamay and Pinot Noir from Ontario’s Niagara Peninsula appellation. This rosé is a delicious experience so I’m glad that I let this one mature. This sparkling wine amuses the senses. It has plentiful, energetic bubble streams to tease the eyes and tongue. It feels textured, off-dry and elegantly oily and it tastes like fresh strawberries and cherries and these flavours carry through this sparkling gamay’s lingering finish. It is absolutely food versatile, too. In other words, Hinterland hit the target with their ancestral method sparkler. Reviewed July 9, 2021
