Deep garnet coloured Cabernet Sauvignon, made in the appassimento style with kiln dried grapes, a technique which enhances and concentrates the flavours. This wine is complex, rich and full bodied, smooth like syrup, intense and fruity flavours of kirsch, prune, plum, black raspberry, black currant along with vanilla and spices. The acidity and tannins are medium plus, and this along with the pronounced fruit flavours and aromas make this an extremely enjoyable wine. High alcohol and rich, with a long finish of black fruits. This was paired with a steak grilled with rosemary and black pepper, which complemented the flavours of the wine and with a mix of grilled/caramelized vegetables (eggplant, zucchini, sweet potato, carrots, yellow pepper, onions and portobello mushrooms) which brought out earthy and spicy notes. The rich texture and taste of the wine is port like and also worked well with chocolate lava cakes. A wine for all courses and a very great pleasure to drink on its own or with food.

A beautiful Ontario wine done in the appassimento-style, concentrating flavours and adding some power and concentration to the fruit profile. Aromas of ripe blck currant and blackberries, with notes of smoke, oak and spice. Full bodied, smooth on the palate, with some structured tannins, and bright acidity on the palate, balancing nicely with rounded dark berry notes, and a smoky, spicy finish. Enjoy with prime rib.
