Nada Gogo Manga Junmai Ginjo from Hyogo is a refined, medium-bodied sake offering aromas of ripe cantaloupe, wild berries, and hints of jasmine. It's off-dry with smooth texture and delicate acidity. Serve it well chilled with seared tuna as the sake's soft character and stone fruit notes will enhance the fish's clean flavors beautifully, or pair it with tempura vegetables where the sake's gentle sweetness and floral finish will balance the crispy, light batter perfectly. The toji (master brewer) crafts this sake using the renowned Miyamizu spring water that wells up in the historic Nada district, the legendary "hard water" rich in minerals from Mount Rokko that has made this region Japan's premier sake-producing area since the 14th century. The Nada Gogo area—meaning "Five Villages of Nada"—encompasses breweries that collectively produce nearly one-third of all sake made in Japan, benefiting from exceptional rice, pure mountain water, and the cold Rokko Oroshi winds that create ideal brewing conditions. Enjoy now or cellar for 1-2 years.

Junmai Ginjo Sake food pairings: seared tuna, tempura vegetables, grilled chicken yakitori.

There are very few people in the wine world who "get it" and Natalie is one of those who brings more fun to a buttoned-up and stodgy game.
