Frank Zoll, owner & winemaker of Zoll Cellars, has spent his life creating art through food. He started as a child, baking pies with his grandmother during the holidays and then continued onto Johnson and Wales University, Providence (RI) . There, he studied as a Baking and Pastry Arts student and earned his degree in Food Science. He continued to practice his art and became an esteemed Pastry Chef, working for such places as Tavern on the Green, Ritz Carlton Boston, Marriott Marquis, and The Boston Copley Marriott.

In 2001, Frank started making wine in his parents’ kitchen while working as Pastry Chef for the Marriott Marquis. Shortly after a couple of batches of box wine, he started working with fresh grapes from California, Massachusetts, and New York. Each year making more and more wine and, after years of practicing the art of wine making, Zoll Cellars was born.

In the spring of 2008, Zoll Cellars planted its first vineyard on Old Mill Road in Shrewsbury, 1/2 mile from Lake Quinsigamond. This first planting consistented of a humble 70 Traminette vines, which were grown organically. Traminette is a new white grape, bred in Cornell, and parented from Gwertztraminer and Seyval Blanc. This variety was not only selected for its tolerance to our harsh New England winters. It was also chosen because its virogous growth will supply food to our spicy, floral, and citrus flavored clusters that will ripen in October.

In 2009, Zoll Cellars became a full-fledged winery. That fall, Frank Zoll started using his winery to continue to perfect his art of winemaking. Their first vintage of South Eastern New England Riesling was bottled in August of 2010 and Zoll wines were introduced into the market in October of 2010.
