Saltonstall Estate was founded in 1998 in a part of Sonoma County which has both the climate and the soils that can produce the finest quality world class olive oils. The gentle slopes of the orchard hills are cooled by the sea breezes and the summer fog which burns off mid-day. These phenomena keep our Frantoio, Leccino, Pendolino and Maurino olive trees cool during the hot summer days which allows for the slow maturation of the fruit. Delay in ripening gives nature time to form the polyphenols and anti-oxidants which give both the unique spicy flavor and life enhancing benefits.

Our goal is to produce and supply the healthiest olive oil available in the US which has the highest percentages of monounsaturated fats, anti-oxidants and polyphenols which olive oil can contain. The gold medal for taste we have been awarded at the Los Angeles County Fair proves that the health enhancing qualities of olive oil are also those components which give it it’s prize winning taste. The Saltonstall family puts it’s pride and prestige in producing the finest olive oil obtainable.Our goal is to produce the healthiest olive oil available in the United States. Olive oil naturally contains groups of substances (tocopherols, phenols) that are micronutrients and antioxidants tht act as regulators and protectors of the human metabolism. These are the substances which determine ththe resistance to oxidation, free radical damage and cancer as well as give the oil its taste and smell. The high monounsaturated fatty acid content of olive oil may be most appropriate for the prevention of cardiovascular disease, no-insulin-dependent diabetes, high blood pressure and aging. While we have created an incredibly healthy olive oil, it also a gourmet delight and has been chosen as the 2005 Best Extra Virgin Olive Oil in the United States.Saltonstall produced 400 gallons of olive oil last year, and plans to produce 500 gallons this year. He sells it on the Internet and at the Petaluma Market, where an 8.4-ounce bottle is priced at $19.99. However, he has not yet turned a profit on the busines
