n 2002, David and Susan Sabin established Sabina Vineyards which they named in honor of David’s mother, Sabina Sabin who was the Matriarch of the family. After spending most of their adult lives in Chicago where they raised three, now-grown, children, David and Susan moved to Napa Valley. Together they have created a winery estate based on the small, family-owned Burgundian properties they have visited over years of travel to famous winegrowing regions. Their primary focus is the production of world-class Cabernet Sauvignon, and they have made a devoted commitment to organic farming. The Sabin Winery, built as the foundation for their home, was designed to maximize an efficient flow for hands-on, artisanal winemaking.

David DeSante's winemaking philosophy is deceptively simple and can best be summed up with the phrase, "keep it real". His straightforward approach to grape growing and to the production of superlative wines is quite refreshing especially in our present time. David focuses on "winegrowing", that is, making sure that the quality of fruit grown for Sabina Vineyards is exceptional. He then draws on his extensive winemaking background and experience to inform decisions along the way. As David says, "The best wines are like the people we enjoy; they are interesting and full of character."Sabina Vineyards produces two Cabernet Sauvignons from two different sub-appellations in the Napa Valley. The Estate Cabernet Sauvignon is grown in vineyards surrounding the Sabina Winery located in Appellation St. Helena, and the Oakville Cabernet Sauvignon is sourced from two distinctly expressive vineyards located in the Oakville American Viticultural Area.
