Pelter Winery, situated in the Golan Heights of northern Israel, was established by Tal Pelter in 2005. In 2001, Tal returned from oenology studies in Western Australia where he was influenced by the local approach to winemaking and the Australian character of the wines.

Wine is part of the fabric of everyday life in Australia - an affordable and accessible source of enjoyment. Tal wanted to introduce this approach to the Israeli market as well as to create high quality, premium wines.

After returning home, Tal began producing wines on the family farm, situated at Moshav Zofit in central Israel. What began as a pilot that resulted in 4000 bottles in 2002, became a fully-fledged business in 2005. At that time, brothers Nir and Tal joined together as co-partners and began the work of establishing the business plan and the Pelter brand. The Golan Region is characterized by: cold dry climate, day/night temperature differentials, basalt soil, high altitude, and high levels of sun radiation. Together these factors create slow, long ripening, a variety of taste depths and high quality grapes. These advantages were enhanced by the open spaces so rare in Israel, and the Golan Heights was selected as the ideal location for both the business and the family.

The 2009 vintage produced 80,000 bottles. Grapes are sourced from three locations – 50% are harvested in the northern Golan, and 50% from vineyards in the Jerusalem hills and the mountains of the Upper Galilee. The diverse regions provide a variety of grapes, including Shiraz, Cabernet Sauvignon, Cabernet Franc and Sauvignon Blanc which offer a range of tastes. The winery is establishing its own vineyards in the Golan Heights and the upper Galilee as part of its move to the Golan Heights.
