Different essences of apple types emerge on the nose and on the palate from yellow to red to golden. Superb craftsmanship. Domaine Pinnacle Sparkling Ice Cider 2009, Frelighsburg, Quebec, Canada: Spectacular! Apple pie with a racy edge from lovely light effervescence and balancing acidity. Domaine Pinnacle Signature Réserve Spéciale Cider 2009, Frelighsburg, Quebec, Canada: Richer and more viscous than the regular cider: this fill every crevice of your mouth and senses with apple essence. Layers of apple goodness unfold on the palate with some cinnamon and baking spices on the finish. Wow. Cider food pairings: soft cheeses, nut-based desserts, biscotti. Domaine Pinnacle Réserve 1859 Cider Aperitif, Frelighsburg, Quebec, Canada: This sinfully great hard cider from Quebec would be a perfect match for Canadian blue cheese! It offers a rich apple essence with aromas of apple preserves and pie, but the added kick and depth of apple brandy in the blend. Yet it's only 17% alcohol, lower than a port, the traditional pairing for blue cheese like stilton. I'd pair this with the Quebec-based Castello Gorgonzola, an historic blue-veined cheese named for the Italian town Gorgonzola in Italy where the cheese was first made in the ninth century. This cow's milk cheese was aged in caves, which is how the blue veins of mold developed from the cave's spores. The brandy gives this cider high tone and so welcome warmth on the upper palate near the finish. Liquid gorgeous. Domaine Pinnacle Still Cider, Frelighsburg, Quebec, Canada: Apple orchard fresh on a spring day. Just a touch of sweetness that tastes most like ripe green and red apples. Baron Philippe De Rothschild Cabernet Sauvignon 2011, Languedoc-Rousillon, France: Robust with smoky black fruit notes and some mocha from the oak aging. Medium- to full-bodied, and nicely balanced.
