This is the kind of red blend that makes you want to explain it to everyone at the table, and the explanation is worth it: Dornfelder, Cabernet Franc, Gamay, and a splash of Lemberger, all mellowed in neutral wood. On the nose it's bright and aromatic, with dried blueberry, crushed violet, and a cool thread of . Winemaker Ron Giesbrecht, nicknamed "Papa Baco" during his 23 years at Henry of Pelham, co-founded this Creek Shores estate with his former Niagara College viticulture student Ying Feng, who had the land while Giesbrecht brought four decades of winemaking instinct. The palate is tangy and focused, with boysenberry, cracked pepper, wild rosemary, and a long, silky finish that punches well above the price. Lightly chill it and pour it with pork sausages off the grill and grainy mustard, or roasted chicken and let the wine's earthy depth do all the talking.

Food pairings: grilled chicken, roasted chicken, pork sausages on the grill.
