Wending Home Estate Vineyard Earth Series Sauvignon Blanc from Creek Shores on the Niagara Peninsula is a genuinely singular Canadian white, fermented and aged in traditional ceramic earthen vessels sourced from China, whose three-centimetre thick stoneware walls allow minute amounts of oxygen to slowly interact with the wine, softening and broadening its texture in a way that neither stainless steel nor oak can replicate. Pale gold in the glass, it opens with a lifted, expressive nose of dried yuzu rind, white peach blossom and a cool suggestion of river stone, flowing into flavours of green mango, preserved lemon and a savory thread of fresh dill on the palate, all underpinned by an extended lees contact richness and a bright, tingling acidity that carries the finish with real energy and length. It is bone dry and medium-bodied, best served lightly chilled, and is drinking beautifully now through 2027. Winemaker Dave Giesbrecht created this Earth Series as one of two parallel expressions of the estate's Sauvignon Blanc, inviting wine lovers to taste them side by side and discover for themselves how vessel choice alone can transform a wine's character and texture, a fascinatingly educational and genuinely rare approach to winemaking in Ontario. Serve it alongside an asparagus risotto finished with parmesan and lemon zest, where the wine's savoury depth and bright acidity will complement every creamy, vegetal bite beautifully, or pair it with grilled shrimp skewers with a garlic and herb marinade, letting its preserved lemon and river stone minerality weave seamlessly into the smoky, charred flavours of the dish.
