The Voyager Estate Shiraz from the cool, maritime-influenced Stevens Valley in Margaret River, Western Australia is a 100% certified organic, estate-grown red harvested from four blocks of 30-year-old vines and aged in a careful blend of French and Hungarian oak, opening with a captivating nose of ripe dark cherry, crushed blueberry and a whisper of dried sage, while the medium-to-full-bodied palate delivers bright, focused flavors of roasted plum, warm nutmeg and a savory thread of ground pepper, all framed by fine, chalky tannins and a long, energetic finish brimming with life and freshness. It is bone dry and beautifully structured, so serve it slightly below room temperature and enjoy now through 2034. Chief winemaker Tim Shand, who joined Voyager in 2022 after honing his craft at leading estates across Australia and beyond, works in close partnership with proprietor Alexandra Burt, who took sole ownership of the estate in 2018 after her father Michael Wright, a perfectionist industrialist who purchased and transformed the property in 1991, passed away and left behind what wine writer Ray Jordan described as a property built on an absolute, unwavering commitment to quality. Voyager Estate earned James Halliday's highest ranking of five red stars in his Australian Wine Companion and made history as one of the first large estates in Margaret River to achieve full Australian Certified Organic status across its entire 112-hectare vineyard by 2023, a milestone that winemaker Tim Shand credits with producing measurably finer, more complex and more terroir-driven wines with each passing vintage. Pour it alongside a slow-roasted venison steak with a wild mushroom and red wine jus, where the wine's dark fruit and earthy depth are a natural match for the gamey richness of the meat, or serve it with a veal Porterhouse rubbed in cracked pepper and fresh rosemary, letting the wine's chalky structure and vibrant energy weave beautifully through every elegant bite.

Shiraz food pairings: venison steak, veal Porterhouse, pheasant.
