On Vigna Madre’s Becco Reale Bio Pecorino from Italy’s Terre di Chieti IGP this 100 % Pecorino offers a crystalline straw-yellow core with an aromatic bouquet that weaves orchard fruit, a hint of Mediterranean herb and a flinty mineral thread. It’s a dry, medium-bodied white with a lively, racy structure and elegant weight that feels bright rather than heavy, showing fresh acidity and a saline-tinged finish that keeps you coming back. Pour it well chilled to accentuate its energy and drink over the next few years while its youthful, invigorating character sings, though it has the backbone to age modestly in good cellaring. Crafted under the guidance of winemaker Giannicola di Carlo with organically farmed fruit and stainless steel vinification, this wine celebrates Pecorino’s indigenous heritage in Abruzzo and comes from a label whose Becco Reale wines have earned recognition at the Luca Maroni Awards and in the Gambero Rosso – Vini d’Italia guide. For food, let this zesty Pecorino play off the richness of seared scallops with a beurre blanc sauce, where its brightness cuts through the creaminess, or serve it alongside a simple bowl of linguine tossed with clams, lemon and parsley to mirror the wine’s saline freshness.

Pecorino food pairings: cheese platter of creamy and hard cheeses like Pecorino cheese, fish and chips, pan-fried panfish.
