Trius Showcase Wild Ferment Chardonnay from Lincoln Lakeshore is an intriguing expression of the Niagara Peninsula, shaped entirely by natural fermentation in French oak barrels. Winemaker Darryl Brooter allowed wild yeasts to take the lead, creating a vibrant and textured wine. Lush orchard fruit flavors—crisp apple, ripe peach, and juicy apricot—meld with subtle nuttiness and an underlying mineral drive, leading to a long, zesty finish. Distinctive and full of character, this Chardonnay highlights the beauty of spontaneous fermentation. A chicken dish with a creamy sauce or camembert cheese is a perfect match.
