Tapiz Alta Collection Cabernet Sauvignon from the San Pablo estate in the Uco Valley, Mendoza is a medium-to-full-bodied Cabernet from one of the highest vineyard sites in Argentina at 4,430 feet above sea level, where cold nights and intense Andean sunshine build both concentration and freshness. On the nose it opens with dark plum, pencil shavings, crushed violet, and a cool herbal thread from the altitude-driven freshness. The palate is structured and elegant, with boysenberry, cracked pepper, and a long, polished finish with firm, powdery tannins. Bodegas Tapiz was founded in 2003 by former medical doctor Patricia Ortiz, who was also the first woman to serve as president of Bodegas de Argentina, and in 2012 she brought in Jean-Claude Berrouet, who made Pétrus for 44 consecutive harvests, as consulting winemaker alongside estate winemaker Fabián Valenzuela. Drink it now through 2031 with roast pork and herbs, where the wine's violet and herbal notes lift the richness of the meat, or try it with grilled game sausages where its firm structure earns its keep at the table.
