Tabalí's Pedregoso Gran Reserva Cabernet Sauvignon from Maipo Valley is a stylish, full-bodied red wine offering notes of blackcurrant, menthol, crushed granite and green bell pepper. This dry wine displays graceful tannins and vibrant character that will continue to develop over the next four years. Serve it at room temperature with steak fajitas as the wine's slightly herbaceous finish complements the charred meat and peppers, or pair it with hearty black bean soup where the wine's succulent texture balances the rich broth. Vineyard wizard Hector Rojas grows grapes on the Maipo Costa, making the most of Pacific Ocean influence to create wines of remarkable freshness. Winemaker Gonzalo Vial ages this wine deftly in French oak, adding layers of cedar complexity while preserving the wine's stony character and cassis fruit. This fresh, mineral-driven Cabernet represents excellent quality and will drink beautifully through 2030.
