Stars Brut Nature Reserva Cava is a medium-light sparkling wine made using the Méthode Traditionnelle, the traditional method of second fermentation in the bottle, just as they do in the Champagne region. It's crafted from the classic Cava trio of Parellada, Xarel-lo, and Macabeu, and it's as easy to pour as it is to drink. On the nose it's fresh and fragrant, with green apple, acacia blossom and lemon curd. The palate is crisp and energetic, with tangerine zest, crushed chalk, a whisper of toasted brioche, and a long, finish with fine, persistent bubbles and mouth-watering acidity. Produced by Castillo Perelada, a Gold LEED-certified winery on the Costa Brava that since 1987 has hosted one of the most prestigious classical music festivals in Europe, welcoming artists including Plácido Domingo and tenor Jonas Kaufmann. Serve it well chilled now through 2028 with steamed Dungeness crab with lemon aioli, where the wine's acidity cuts through the richness, or try it with seafood tapas for a coastal Spanish pairing that needs no further justification.
