A whisper of dried thyme and crushed bay leaf opens to a core of juicy plum and tart cherry, all underpinned by a subtle iron-etched minerality. Creamy tannins and polished spice notes glide through a nuanced, velvety finish. Serve with rosemary-garlic lamb chops and porcini-filled ravioli in sage butter.
