Winemaker Dan Sullivan chooses a different blend each vintage to create what he calls "the certain ratio" based on sampling from different barrels. This is a red wine blend of Cabernet Sauvignon (45%) and Merlot (34%) from Niagara vineyards plus Cabernet Franc (21%) from Rosehall Run vineyards in Prince Edward County. - Community Wine Reviews

The 2012 Vintage will go down as legendary for Bordeaux varietals in Ontario. A very early spring got things off to a roaring start and continued with warm mostly dry weather throughout the growing season. The Certain Ratio is a pan-Lake Ontario effort with the Cabernet Sauvignon and Merlot from Niagara and the Cabernet Franc from Prince Edward County.

Right out of the field I determined this wine needed a bit of a gentle touch to avoid burying the glorious fruit in a shroud of dark tannin from over extraction. Starting with a cold soak for 72 hours the Merlot underwent a long relatively moderate fermentation peaking around 27 degrees Celsius for a total of 20 days. The Cabernet Sauvignon fermented in about 18 days, was left on the skins a week after the cap dropped to gently extract a bit more structure while retaining the rich core of fruit. Finally the County-grown Cabernet Franc came in a week later on October 24-25 and was fermented for a total of 26 days.

Barrel Aging
The Merlot and Cabernet Sauvignon were aged in French and Northern forest American Oak about 70% new and the Franc in mostly second fill French oak for about 16 months. Each barrel was selected individually and blended through a series of trials resulting in ‘The Certain Radio’ blend. The cepage was settled cold in tank for about 3 weeks without fining and was racked once prior to bottling. This minimal handling ensures that the wine has retained the natural texture and flavor that emerged from the barrel.
