Peregrine Sauvignon Blanc from Central Otago, New Zealand's South Island is a medium-bodied white from a region far better known for Pinot Noir, and it makes a quietly compelling argument for why that should change. On the nose it offers white grapefruit, dried elderflower, fresh gooseberry, and a cool minerality from the certified organic vineyards sitting above 1,000 feet in the Bendigo, Pisa, and Gibbston sub-regions. The palate is richly concentrated and focused, with green mango, lemon curd, crushed limestone, and a long, zesty finish with bright, food-friendly acidity. Winemaker Nadine Cross, a former accountant who retrained in France, California, and Marlborough before joining Peregrine in 2010, crafts this wine in a building designed to evoke a falcon's wing in flight, and the McLachlan family estate is the largest certified organic vineyard holder in all of Central Otago. Drink it now through 2028 with pan-seared halibut with lemon caper butter, where the wine's citrus notes are a natural match, or try it with seared scallops and pea purée where its concentrated fruit holds its own against the sweetness of the shellfish.

Sauvignon Blanc food pairings: pan-seared halibut with lemon caper butter, chilled poached prawns with avocado and citrus salad, seared scallops with pea purée and crispy pancetta.
