Pepperjack Cabernet Sauvignon from South Australia is a full-bodied red drawing fruit from multiple Barossa Valley vineyard parcels, aged in a combination of French, American, and Hungarian oak with minimal handling to let the Cabernet's natural character lead. On the nose it's bold and expressive, with blackcurrant, dark chocolate, toasted cedar, and tobacco leaf. The palate is concentrated and layered, with boysenberry and baking spice, and a long, polished finish with firm, well-knit tannins. Winemaker Richard Mattner is a born-and-bred Barossa local who jokes that a great steak is the only pairing he needs, and the Pepperjack brand was launched in 1998 by Saltram Wine Estate, one of the Barossa's oldest continuously operating wineries, founded by William Salter all the way back in 1859. Drink it now through 2030 with barbecued ribs in a sticky sauce, where the wine's richness holds its own against the smoke and sweetness, or try it with veal chops and roasted garlic where the dark fruit and firm tannins are a natural partner.
