This is not a Sauvignon Blanc that many have come to expect. This is less fruit forward and much more mineral focused. You can smell the limestone on the nose, stone fruit, yellow delicious apples and poached lemon. When first tasted the stone fruit and limoncello flavours pull through first, followed by the mineral limestone and bruised apple. It is off-dry, which lessens the potency of the acidity as it courses through the palate. Not overly long lasting in flavour, but a great sipping wine, and excellent for a light pasta/chicken dish.

Delightfully tart, yet sweet.

Winemaker notes:
The nose is crisp but smooth, with notes of honeysuckle. Light and delicate with subtle herbaceous hints, gooseberry and pear prevail. Limited aging in oak barrels provides a vanilla smooth, mouth filling finish that works all the senses.

Food pairings: Grilled seafood, chicken or pasta with a light cream sauce and light cheeses.
Flinty and rocky with plenty of fresh apple and nectarine with some pineapple and hay adding complexity and depth. Off-dry with a ripe fruit core. Bright acid and good minerality provide balance. Source: Vintages Wine Panel, July 2013
