Okunomatsu Sakusaku Dry Sake is a light, dry sake from Fukushima Prefecture with a clean, refreshing character that pulls you in from the first sip. The nose opens with white peach and a whisper of fresh cream, giving way to a palate that's crisp and well-balanced with a soft savory quality and a clean, dry finish. It's light-bodied with bright acidity and finishes quickly and quietly. Serve it chilled or gently warmed, and consider cellaring it for a year or two as the water and flavours knit together nicely over time. Toji Keiichi Tonokawa is the most awarded living sake master in Japan, having taken gold at the Japan National Sake Competition 20 times in 21 years, a record that's hard to wrap your head around. The brewery itself goes back to 1716, when a defeated samurai family turned to sake production to survive, and the 19th generation of that same family still runs it today.
