The 2007 Cabernet Merlot is a blend of 35% Cabernet Sauvignon, 33% Merlot, 17% Cabernet Franc and 15% Syrah respectfully. Sourced from both the Beamsville Bench and Niagara-On-The-Lake, this wine was fermented using selective yeasts and aged for 13 months in 100% French oak. Mouthfilling flavors of plums, blackberries, red currants and black spice with firm but elegant tannins that provide great structure. At its current state this wine is a great candidate for mid-term cellaring.
