Nicolas Vins Sélection Entre Restanques et Garrigues Cairanne A.P. from the southern Rhône is a full-bodied, Grenache-led red from the sun-baked stone terraces and garrigue-covered hillsides that inspired the wine's name, and is aged in concrete vats. On the nose it's bold and expressive, with crushed blackcurrant, wild thyme, warm clove, and an earthy minerality that feels pulled straight from the hillside. The palate is powerful and juicy, with dark plum, rosemary, and a long, structured finish with polished tannins that have both confidence and restraint. François-Xavier Nicolas founded this boutique négociant house in 2011, dedicated entirely to wines of terroir from the southern Rhône, and Cairanne only received its own Cru appellation status in 2016, making this one of the newer jewels in the southern Rhône's crown. Cellar it through 2032 with slow-roasted ribs, where the wine's dark fruit and firm structure are a perfect match, or try it with a burrata and roasted pepper pizza for a more casual occasion that still honours the wine.
