Moniack Mead is a medium-bodied, off-dry honey mead with a deep amber colour and aromas of beeswax, dried wildflowers, and toasted toffee. On the palate it's smooth and warming, with rich honeyed sweetness balanced by a gentle dryness, a whisper of liquorice spice, and a lingering floral finish. Head Winemaker Sarah Massey oversees production of this recipe, which originated at Moniack Castle, a 16th-century Scottish Highland estate where Phillipa Fraser launched the winery in 1980 as the first business north of Manchester licensed to produce alcohol other than whisky. Serve it at room temperature or gently warmed in a whisky glass. Try it alongside a sharp aged cheddar and apple chutney board, where the honey notes play beautifully against the tangy cheese, or pour it with a slow-roasted pork tenderloin glazed with grainy mustard and honey for a pairing that feels made for a Highland winter table.
