Leconfield Coonawarra Cabernet Sauvignon offers concentrated aromas of dark plum, mint and hints of cigar wrapper. It's dry and medium-to-full bodied with silky tannins. Serve it at room temperature with herb-crusted venison roast where the wine's elegance complements the lean meat while its structured finish balances the rich flavors, or cellar it through 2039. Senior winemaker Paul Gordon crafts this wine at the estate founded in 1974 by Sydney Hamilton, who at 76 years old pioneered temperature-controlled fermentation of white wines in the 1940s, a technique that revolutionized the Australian wine industry by allowing delicate aromatics to survive fermentation. This versatile wine also pairs beautifully with beef burgers topped with aged cheddar and caramelized onions, where the wine's ripe fruit echoes the sweet onions while its firm structure cuts through the richness.
