Ktima Biblia Chora Ovilos White Macedonia P.G.I. is a breathtaking, full-bodied white of exceptional pedigree, blending equal parts Semillon and Assyrtiko from the organic estate vineyards on the sun-drenched slopes of Mount Pangeon near Kavala, producing a wine of remarkable depth and luminosity with aromas of white peach, candied citrus zest, warm acacia honey, exotic tropical fruit, and a haunting thread of toasted vanilla and sea-salted mineral that lingers long after the last sip. It is dry and richly textured, with a creamy, lustrous mid-palate weight drawn from fermentation and five months of lees contact in French oak barrels, beautifully counterbalanced by the electric, saline freshness that is Assyrtiko's great gift. Winemakers Vassilis Tsaktsarlis and Vangelis Gerovassiliou, two of Greece's most celebrated oenologists, created Ovilos White as the first wine in Greece to unite these two varieties, a genuinely pioneering blend that has since become a benchmark for the entire country's white wine ambitions. Tsaktsarlis studied under the legendary Denis Dubourdieu in Bordeaux, which explains the masterful handling of Semillon that gives this wine its richness and ageing grace. The estate's award history is extraordinary: Ovilos White earned "Best Dry White Wine in Europe" at Mundus Vini, and past vintages have claimed Decanter International Trophy, while the 2024 vintage earned Gold at the Decanter World Wine Awards 2025. Serve it below room temperature with a grilled lobster tail in herb butter, where the wine's creamy texture and saline length will make an unforgettable pairing, or with a baked whole fish stuffed with lemon and fennel for an elegant, sun-drenched Greek table. Cellar it through 2034 and beyond for even greater complexity.
