Ktima Biblia Chora Areti is a 100% Agiorgitiko from the Pangeon region of Macedonia, sourced from a single rocky vineyard of limestone and clay soils perched at 300 to 420 metres elevation on the southern slopes of Mount Pangeon, where altitude and cooling breezes drifting in from the Aegean Sea give the grapes a freshness and focus rarely found in warmer Greek appellations. Inky and deep in the glass, it seduces with a nose of ripe fig, mulberry and pomegranate, threaded through with dried oregano, tobacco leaf and a haunting suggestion of graphite that anchors the whole bouquet. It is bone dry and full-bodied with grippy, well-knit tannins and a long, savoury finish, best served just below room temperature, with real aging potential through 2031. Winemaker Vassilis Tsaktsarlis has helped put Biblia Chora on the international map, and the Areti stands as a flagship expression of what Agiorgitiko can achieve outside its more famous home of Nemea, making it one of the most compelling arguments for Greek fine wine today. Serve it with slow-braised lamb shanks finished with olives and tomato, where the wine's savoury depth and ripe fruit will echo the boldness of the dish, or pair it alongside a golden, flaky spanakopita straight from the oven, letting its earthy, herbal notes mirror the salty spinach and feta filling beautifully.

Agiorgitiko food pairings: braised lamb shanks, spanakopita, roast BBQ chicken.
