From Sélèque R. & JM , Jm Sélèque Solessence is a bone-dry, medium-bodied Champagne produced from 60% Chardonnay, 30% Pinot Meunier and 10% Pinot Noir with 50% reserve wine. A dosage of 7 g/l balanced the wine. Look for Meyer lemon and meringue flavours along with white florals, fuzzy peach, nougat, brioche and minerally notes on a pillowy mousse and laser-like acidity on the palate. Grapes for the cuvée were sourced from vineyards farmed organically and biodynamically, and the wine was fermented in a combination of steel vats, oak barrels, casks and ceramic egg with a minimum of 18 months on its lees.
