Coonawarra's terra rossa soil, a thin band of red earth over limestone, has made this corner of South Australia the benchmark for Cabernet Sauvignon. Hollick named this bottling after a poet who once called the estate home. Black cherry and cassis lead the way. Firm tannin builds real backbone underneath. A savoury note of bay leaf settles in as the wine opens up. Grilled T-bone or roast pork tenderloin would make a fine match. If poetry pairs with wine the way this bottling suggests, Coonawarra might be onto something the rest of us are still catching up to.
