The fruit for this wine is organically grown and certified. It is 100% estate grown. A hazelnut-rich white with refreshing notes of white peach and green apples. Succulent and full-bodied with an opulent texture.

Fumé Blanc food pairings: chicken and sage skewers, fresh tomato and basil salad, Thai green curry fish, smoked oyster Poor Boy sandwiches.

When people ask what the difference is between Fumé Blanc and typical Sauvignon Blanc, this illustrates the difference in a very clear-cut way. It is super ripe and full bodied amd fermentation and aging in-barrel has meant this wine has aged oxidatively (developing secondary character from oak, yeast lees, and slight exposure to oxygen); versus reductive aging (in sealed vats or autoclaves at cool temperatures to preserve freshness and vitality).
It has a gorgeous deep yellow, with some goldness developing.
Aromatically, it has lots of dried/candoed ginger and pineapple. Atulfo, typical herbaceousness (chive or lemongrass), and some great headiness from the oak. On the finish (and not overchilled) you get some smoke and vanilla.
The flavours are harmonious and complex. Loads more dried pineapple. Some honey, baked apple, brown spice, and some citrusy undertones.
This is an amplified example of Fumé. Great wine from a winery devoted to only high quality products. Don't age it too long, because the oxidative age character and freshness are harmonious now, but it will shed its leftover freshness if you wait too long.
For a crab-bake or with a lobster roll this would be fantastic.
From Rosomel Vineyard on the Beamsville Bench, Niagara Escarpment wine region, Hidden Bench (2015) is a full-bodied Fumé Blanc with rich tropical fruit notes, gooseberry and hazelnut flavours finishing with a flinty citrus freshness. Well done. - Community Wine Reviews
