Heirloom Vineyards McLaren Vale Shiraz from South Australia is a dry, full-bodied wild-fermented red with a deeply expressive nose of toasted walnut, clove, dried mission fig, violets, and a thread of tar and roasted coffee that builds with every swirl. On the palate it is plump and opulently textured, with velvety tannins, generous dark fruit concentration, and a long, savory finish of charred meat, black pepper, and bitter chocolate that lingers with remarkable persistence. Serve at room temperature and enjoy from 2026 through 2034, as this wine has the architecture to age beautifully. Winemaker Elena Brooks, who co-founded Heirloom Vineyards sharing her Dandelion Vineyards expertise, crafts this wine from hand-tended McLaren Vale vines, naturally open-fermenting and aging the wine for 16 months in a combination of new and seasoned American and French oak barrels to build complexity without overwhelming the fruit. Heirloom Vineyards was born in 2000 out of a genuine love story: a young Bulgarian winemaking student caught the eye of a wine judge, and together they made two vows that define every wine produced here, to honour the traditions of the old world and its ancient vineyards, and to champion the finest clones of each variety farmed organically and biodynamically. Seven painstaking vintages of trial and error passed before the first wine was considered good enough to carry the Heirloom name. Pair it with a slow-roasted leg of lamb crusted with cumin and coriander, where the wine's spice and dark fruit depth will embrace the richness of the meat, or serve it alongside roast game hens with a mushroom and thyme jus, letting the wine's earthy intensity echo every savoury, golden bite.

Shiraz food pairings: roast leg of lamb, turkey, roast game hens, veal Porterhouse.
